How To Make Homemade Shrimp Egg Rolls

Ingredients:
1 pound medium-sized shrimp, shelled and deveined, cut into 3 pieces per shrimp
1 stalk celery, finely chopped
4 bags of bean sprouts
¼ cup of soy sauce
1 teaspoon of curry powder
2 packages of egg roll wrappers
Cornstarch and water mixture (for sealing the egg rolls)

Instructions:
1. Steam the Filling: Combine shrimp, celery, bean sprouts, soy sauce, salt, pepper, and curry powder in a pot. Cover with a lid and steam for 5-10 minutes, stirring every couple of minutes.

2. Cool and Prep: Once cooked, remove the filling from heat and let it cool. This step is crucial to avoid soggy wrappers.

3. Wrap the Egg Rolls: Lay out the egg roll wrappers and place about 2-3 tablespoons of the cooled filling in the center of each wrapper. Roll tightly from the bottom, folding in the sides and sealing with the cornstarch and water mixture. Ensure a tight seal to prevent any unfortunate explosions in your fryer.

4. Fry to Perfection: Heat oil in a deep fryer to 375°F (190°C). Fry 4-6 egg rolls at a time until they are golden brown and crispy, about 3-5 minutes.
