Sushi first arrived in the West in the early 1900s, after the Meij Restoration era saw more normalized relationships with Japan and the rest of the world. From basic California Rolls with avocado and crab, to more intricate Temaki hand rolls, sushi has become as common as grocery store fried chicken and yet remains a fine food for those with refined tastes.
